Classic Turkish Kofte
Ingredients
300 grams minced beef
200 Grams of Minced Lamb
2 onions
1 egg
2 tablespoons Finely Chopped breadcrumbs
1 teaspoon cumin,
1 teaspoon of chilly flakes (optional)
1 teaspoon salt,
1 teaspoon Black pepper
Hand full of chopped parsley,
1 teaspoon of Carbonate of Soda
Method
Grate your onion and squeeze the juice out put this in the bowl add your meat breadcrumbs cumin salt pepper chilli flakes chopped parsley and your bi carbonate of soda and start kneading
the key to this is the longer you knead the better depending on the oil content of the meat if the meat is lean sometimes put some olive oil thats why i have split the meat content with beef and lamb as generally lamb is oily
once you have kneaded the Kofta you should end up with a good ball of meat leave this overnight to marinate
the next day you can shape your koftas
to shape i generally make a ball then flatten them to nice flat kofta's like in the picture
light up the barbie so that the Charcoal is white put ion the grill turning occasionally
i also have a basting brush and a cup with olive oil and lemon squeezed into it and occasionally baste the koftas so they don't go dry and you get that barbecue flavour
open your pide insert and Enjoy
