Chicken tikka
Marinated in yogurt, ginger, garlic and spices, these juicy chicken skewers make a great starter for an Indian-inspired feast or a delicious lunch, wrapped in flatbreads
Cooking these chicken tikka skewers – marinated in yogurt, ginger, garlic and spices – on a barbecue provides extra flavour.
Ingredients
- 3 large chicken breasts, cut into chunky pieces
- 75g yogurt
- 2 tbsp ginger and garlic paste
- 1 tbsp madras curry powder
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp smoked paprika
- 2 tsp mild chilli powder
- 1 tbsp lemon juice
Method
- STEP 1
Tip all of the ingredients into a large bowl with plenty of seasoning and mix really well. Cover and chill for at least a few hours but preferably overnight.
- STEP 2
Make sure Your Barbecue Coal is white . Thread the chicken pieces onto four metal skewers, leaving any excess marinade behind, packing in the pieces so they are all touching. Put onto your barbecue Turning occasionally repeat until cooked through and charred all over.
- STEP 3
Serve with flatbreads, raita, shredded lettuce and some pink pickled onions, if you like.
